  • Marinate the chicken with black peppercorns, Himalayan Chef Salt to taste, Himalayan Chef Shakar or brown sugar, fresh thyme springs, fresh bay leaves, and Himalayan Chef Garlic powder. Place it in the fridge overnight.
  • In a large mixing bowl, combine the Himalayan Chef Flour, baking powder, cayenne pepper, paprika, and Himalayan Chef Onion and Garlic Powders.
  • Fill a big strong pan halfway with oil - the oil should be 8cm deep - and heat on medium to high.
  • Remove the chicken from the fridge and, one or two pieces at a time; plunge into the flour until well coated.
  • When the oil is heated enough, begin with two thighs: rapidly plunge them back into the flour, and then carefully lower them into the hot oil with a slotted spoon. Fry for 5 minutes, rotating halfway through, before transferring to a wire rack over a baking tray. Serve hot!
