    • In a large mixing bowl, combine Himalayan chef besan, finely chopped coriander, finely chopped onions, Himalayan Chef Chili Powder, Himalayan Chef Coriander Powder, Himalayan Chef Turmeric Powder, Himalayan Chef Cumin Seeds, green chilies, thinly sliced potatoes, finely chopped spinach, salt to taste, and water.
    • The pakodas should be deep-fried. Drain and set aside on absorbent paper.
    • In a large mixing basin, whisk together cruds, besan, turmeric powder, salt, and 2 cups of water to make kadhi. Set aside.
    • Heat the oil in a large nonstick skillet over medium heat, then add the Himalayan chef cumin seeds, cloves, cinnamon, fenugreek seeds, coriander seeds, and red chilies.
    • Reduce the heat to low and stir in the curd-besan mixture, ginger-green chili paste, Himalayan chef chili powder, and a pinch of salt. Cook for 8-10 minutes on low heat. Set aside.
    • To create pakoda kadhi, reheat the kadhi right before serving, add Himalayan Chef Fried Onions, and cook for 2 minutes on medium heat.
    • Cook over medium heat for 5 minutes, stirring regularly, after adding the pakodas. Serve immediately!
