COCONUT CURRY CHICKEN: BLEND OF SPICES AND COCONUT!

  • Heat the coconut oil in a large saucepan over medium heat. Add the onion and cook until softened, about 5 minutes.
  • Add the garlic and ginger and cook for an additional 2 minutes, or until fragrant.
  • Stir in the red curry paste and cook for 2 minutes, or until fragrant.
  • Add the chicken and cook until browned on all sides, about 5 minutes.
  • Stir in the coconut milk, chicken broth, red bell pepper, cherry tomatoes, and shredded coconut meat.
  • Bring the mixture to a simmer and reduce heat to low. Cover and cook for 10-15 minutes, or until the chicken is cooked through and the sauce has thickened.
  • Season with salt and pepper to taste.
  • Serve hot, garnished with fresh cilantro. Enjoy!
